1 tbs sesame oil
1 lb ground turkey
2 cloves garlic, minced
2 green onions, sliced thin
2 medium carrots, chopped or julienned
1 packaged dried shitake mushrooms
1 package bean thread noodles, 8 oz
2 quarts chicken broth
1 tbs wheat free soy sauce (San Jay's Wheat Free is my favorite)
1 tbs fish sauce (optional)
1 ramen noodle seasoning mix
cilantro for garnish
In a large pot, heat broth and add noodles and mushrooms, soy sauce, fish sauce and Ramen seasoning. Remove from heat and let soak until noodles and mushrooms are soft. Remove mushrooms and slice thin (a scissors works great) and put back in pot.
In a skillet, heat sesame oil, add turkey and garlic. Cook thoroughly. Add green onions and carrots and saute 5 minutes. Add turkey mixture to the large pot. Let simmer until carrots are soft.
Garnish with cilantro

Wheat FreeOriental Ramen Noodles
I'm not the biggest Ramen Noodle fan, but sometimes I get a hankerin' for it. Here is how I do it, wheat free.
Seasoning:
1 tbs onion powder
1 garlic clove, or 1/4 tsp garlic powder
1/4 tsp ginger (fresh is best)
1/4 tsp black pepper
1/4 tsp chili powder
1/4 tsp sugar
Salt to taste
1 tbs butter (optional)
Saifun bean thread noodles, about 2 oz (1 bundle)
Pour enough boiling water over the noodles to just cover them. Add seasoning ingredients and mix well.
To make chicken or beef flavored, either use broth instead of water or add 1 bouillon cube.
